Watch Out Popeye! Iron Soup Recipe |

Popeye has nothin' on Dr. Peebles when it comes to building blood. This soup recipe was given to my friend/client a few years ago when she asked if there was anything she could do to avoid having a blood transfusion. She was too weak to buy the ingredients or make the soup, so my then-husband and I did it for her. She came to an open session one week later and her cheeks were rosy, and there was a bounce in her step. She didn't have to have the transfusion. How do you like them apples?
1 head of spinach 1 bunch (about 3) of beets WITH GREENS attached 1 pound of organic beef (it's not necessary for it to be organic, but highly recommended) In a medium kettle, cover the beef with pure water (about 1 inch above the beef). Simmer...until the beef is HARD not soft and tender. Add water as needed. When the beef feels dry and hard, take it out of the water and discard it. (The dog won't even eat this.) Cut up the head of spinach into salad size pieces and put it into the water (stems and all). Simmer again...until the spinach is mush. Peel the beets and cut them into small bits. Cut up the beet greens. Add the beet stuff to the kettle, and boil again, until the beets are totally mush. When the mixture has cooled a bit, blend it in your blender, a small batch at a time. Pour each blended batch into a large bowl. Stir it all together when finished. The result can sometimes look almost black. Now, have a warm cup of this soup at around 2:00 in the afternoon, and feel your body spring to life. I LOVE this soup. (I've cheated and put a little vinegar and salt in my soup...it doesn't seem to mess up the affect it has.) Labor intensive, and worth it.
